1) Vietnamese Pho (Beef Rice Noodle Soup)

Bun Bo is a popular Vietnamese soup containing rice vermicelli and beef.  Hue is a city in central Vietnam associated with the cooking style of the former royal court. The dish is greatly admired for its balance of spicy, sour, salty and sweet flavors and the predominant flavor is that of lemon grass.

In Sydney, Gia Hoi is very wellknown for serving this dish of Bun Bo Hue.

3) Banh Xeo ( Vietnamese Crispy Pancakes) 

A good banh xeo is a crispy crepe bulging with pork, shrimp, and bean sprouts, plus the garnish of fresh herbs that are characteristic of most authentic Vietnamese dishes.
To enjoy one like a local, cut it into manageable slices, roll it up in rice paper or lettuce leaves and dunk it in whatever special sauce the chef has mixed up for you.
